Wild cardoon is a very ancient plant, whose first records date back to ancient Egypt. However, it seems that it was already used earlier in Ethiopia; it is precisely from this plant that the cultivated cardoon and the artichoke were domesticated. It is a typical winter vegetable, and it is the cold and frost that give it the best flavor and the most tender texture.

It is a food rich in fiber and mineral salts, with a strong satiating power and a low caloric intake. It is especially known for its countless medicinal properties, in particular for stimulating liver and kidney functions, promoting the elimination of toxins, and possessing antioxidant and purifying properties.
