Indeed, the sweetness of the jams perfectly balances the flavor or acidity of the cheeses, and with the right pairings, you achieve a perfect harmony of tastes that enhances the flavors. Each cheese favors a different combination that brings out its specific organoleptic characteristics to the fullest. Fresh cheeses pair well with more acidic jams, such as our pomegranate jelly.

For goat cheeses and blue cheeses like gorgonzola, we have developed a unique recipe: vanilla tomato jam. On the other hand, more aged and saltier cheeses pair nicely with sweeter flavors, such as our quince jelly or mushroom jam, a recipe of our own invention.
