Cedrat ♥ marmalade

We separated the peel from the pulp, and while we used the peel to prepare the citron zest marmalade, we used the pulp to make this special preserve.

Although it is very acidic, once transformed into jam, the inside of the citron acquires a delicacy that makes it very pleasant and appreciated by lemon lovers.

CURIOSITIES

This fruit stands out for its large size (a single fruit can easily weigh more than a kilo), its bumpy, thick skin, and its very intense fragrance. Its taste is less acidic than that of a lemon, with sweeter and more fragrant notes.

The citron also has a strong symbolic value in Sicily. In certain traditions, it is associated with prosperity, fertility, as well as protection and longevity.

USAGE TIPS

To be spread on bread or biscuits, to accompany cakes, or to use as a filling for tarts.
