We separated the peel from the pulp and, while we prepared the candied citron peel jam with the former, we used the pulp to create this particular preserve.

Although it is very acidic, once transformed into jam, the inside of the citron develops a delicacy that makes it very pleasant and appreciated by lemon lovers.

DID YOU KNOW?

This fruit stands out for its large size (a single fruit can easily exceed one kilogram), its thick and irregular peel, as well as its very intense fragrance. Its taste is less acidic than that of lemon, with sweeter and more fragrant notes.

Citron also has a strong symbolic value in Sicily. In some traditions it is associated with prosperity, fertility, as well as protection and longevity.

To spread on bread or biscuits, to accompany cakes, or to use as a filling for tarts.
