Cedrat zest marmalade

The citron is a citrus fruit that resembles a lemon but is more aromatic and much less known, distinguished by the thick and tasty white part of its peel.

For this marmalade, we used only the outer part of the fruit, which resulted in a pastel ochre color and a delicate lemony flavor, without the typical acidity.

Sicilian citron is particularly known for being enjoyable when eaten raw.

During the winter months, it is customary to eat small pieces of citron with salt, evoking nostalgic memories of the summer heat and the refreshing lemon-and-salt seltzer drinks enjoyed on the hottest afternoons.

USAGE TIPS

To spread on bread or biscuits, to accompany desserts, or to use as a filling for cakes.
