WILD FENNEL IN BRINE

Wild fennel is an aromatic and medicinal plant with a flavor reminiscent of dill. It is widespread in Sicily and throughout the Mediterranean basin and has been known and appreciated since antiquity for its nutritional and phytotherapeutic properties.
Rich in active compounds, especially anethole, it offers significant benefits for the digestive system: it has anti-inflammatory, carminative, antispasmodic, purifying, and diuretic effects. Its antioxidant and anticancer properties have also been discovered more recently.
Prepared in brine with only water and salt, its properties and aromas are fully preserved, allowing us to use it in our recipes as if it were freshly harvested.
Curiosities
It seems that the name Marathon comes from wild fennel: in Greek, this plant is called marathṓn, and it was so abundant in the Marathon plain that it gave its name to the place—and later to the race.
