Extra mushroom jam

Mushroom jam is a sweet cream of our own creation, made only from Pleurotus eryngii mushrooms—the most common variety in our region—and brown sugar.

The result is an unusual sweet preparation, hazelnut in color, with an intense mushroom flavor and a hint of chestnut.

CURIOSITIES

Known since antiquity, this mushroom is the subject of countless legends. One of them tells that these mushrooms are the children of thunder and were created by a thick layer of fog.

The Latin poet Horace called them the food of the gods, and in the Middle Ages, they were banned because they were considered aphrodisiacs.

USAGE TIPS

Perfect with semi-aged cheeses, such as Pecorino or Gruyère.

Also try it paired with red meat, especially pork or duck, like duck breast.
