Extra crabapple Jam

Crabapple are very special fruits: they resemble small apples and grow on small trees belonging to the rose family. Once transformed into jam, they release a multitude of forest-like aromas and flavors ranging from apricot to quince, with hints of strawberry.
To achieve this creamy-textured jam, we let the fruits macerate in water after hand-picking them; this process enhances their intense apple-like fragrance. It is also a forgotten fruit, and we offer it in jam form in order to preserve it and bring it back to light.
CURIOSITIES

The crabapple is a fruit that was once widely cultivated and highly appreciated. Today it is gradually disappearing, but since the trees are very hardy and long-lived, some people still harvest fruits from the old trees planted by their grandparents — as we do.
There are three known varieties of this ancient fruit: yellow crabapple, white crabapple, and red crabapple. We cultivate the yellow variety, which is the sweetest and the least acidic.
