Wild cardoon tapenade

Wild cardoon tapenade is the result of the fusion between this plant with a thousand virtues and VulcanOil, our own IGP extra virgin olive oil.

In this preserve, the tradition of ancient harvesting and processing methods meets an innovative recipe to create a tapenade with an artichoke-like flavor, but more delicate and with a velvety texture.

Wild cardoon is a very ancient plant, with the earliest mentions dating back to the ancient Egyptians. However, it seems to have been used even earlier in Ethiopia; it is from this plant that the cultivated thistle and the artichoke were domesticated. It is a typical winter vegetable, and it is the cold and frost that give it its best flavor and the most tender texture.

It is a food rich in fiber and minerals, highly satiating while low in calories. It is especially known for its countless medicinal virtues, notably for stimulating liver and kidney functions, aiding in toxin elimination, and possessing antioxidant and purifying properties.
