Wild fennel tapenade

The wild fennel tapenade is the result of the fusion between this plant with a thousand virtues and VulcanOil, our own IGP extra virgin olive oil. This cream has a herbaceous green color and a pronounced flavor reminiscent of dill. Thanks to the processing carried out immediately after harvest, the aromas are perfectly preserved, and when you open the jar, this typically Sicilian scent is instantly released.

Wild fennel is an aromatic and medicinal plant widespread in Sicily and throughout the Mediterranean basin, known and appreciated since Antiquity for its nutritional and phytotherapeutic properties.

Rich in active compounds, especially anethole, it offers considerable benefits for the digestive system: it has anti-inflammatory, carminative, antispasmodic, depurative, and diuretic effects. Its antioxidant and anticancer properties have also been recently discovered.

It is believed that the name Marathon comes from wild fennel: in Greek, the plant is called marathon, and it grew abundantly in the plain of Marathon—so much so that it gave its name to the place, and later, to the famous race.
