wild fennel in brine
Wild fennel is an aromatic and medicinal plant, with a flavor reminiscent of dill, widespread in Sicily and throughout the Mediterranean basin, known and appreciated since Antiquity for its nutritional and phytotherapeutic properties.
Rich in active compounds, particularly anethole, it offers significant benefits for the digestive system: it has anti-inflammatory and carminative, antispasmodic, purifying and diuretic effects. Its antioxidant and anticancer properties have also been recognized more recently.
Preparation in brine, using only water and salt, fully preserves its properties and aromas and allows us to use it in our recipes as if it had just been harvested.
DID YOU KNOW?
In Mediterranean pagan rituals, wild fennel was used to purify, protect and attract good fortune. Its seeds were burned and its stems hung on doors during the summer solstice to celebrate the power of the Sun.
