Citron is a citrus fruit similar to lemon, but more aromatic and much less known, characterized by the white part of its peel, which is very thick and flavorful.
For this marmalade we used only the outer part of the fruit, thus obtaining a pastel ochre color and a delicate lemon flavor, without its typical acidity.
DID YOU KNOW?
Sicilian citron is distinctive in that it can also be eaten raw. During the winter months it is customary to eat small pieces of citron with a pinch of salt, nostalgically recalling the summer heat and the lemon and salt seltzers enjoyed on the hottest afternoons.
