Mushroom jam is a sweet cream of our own creation, whose only ingredients are mushrooms of the Pleurotus eryngii variety, the most widespread in our region, and brown sugar.

The result is a surprising sweet preparation, hazelnut in color, with an intense mushroom flavor and a slight hint of chestnut.

DID YOU KNOW?

Known since Antiquity, this mushroom is the subject of countless legends. One of them tells that these mushrooms are children of thunder and that they were created from a thick veil of fog.

The Latin poet Horace called them the food of the gods and, in the Middle Ages, they were forbidden because they were considered aphrodisiac.

SERVING IDEAS

Perfect with semi-aged cheeses, such as pecorino or gruyère. Try it also paired with red meat.
